2nd class/ 2nd week of baking class

Cake Foundation Baking class

It's full of excitement today!!
Loved the way how i baked my chiffon cake after the class, did it with a partner: auntie Sohn.
I thought it was a difficult one, but it turned out... It was easy and lovely... Just need to make the right consistency of every mixture of ingredients. Ooh happy day!!!

My first official cake baking class

My first official baking class started today. Oct 17,2012. It was really a wonderful feeling to be in Chef Judy Koh's class of Creative Culinaire.

First let me talk about our Chef teacher. Before I chose the baking school, I researched about the Chef who will teach me, actually I did research of other chefs from other companies too. It is very important for me. I am a perfectionist. (Self-proclaimed) but in a way I wanted to be taught by someone with really very good skills and with awesome reputation in baking business because I know that person will have a lot to share and I know little things of what she will share would mean a lot to me and to how I am going to use it in practice.
According to published online articles she had 2 guiness world record (maybe more... i found 2record so far ;) ) First, she was one of the Chefs who made the tallest chocolate structure, another one is the biggest cake in the world... I just can't remember which year.
I was so excited attending her class today. She's a humorous person and friendly, she also wears a smile on her face all the time while she's teaching and demonstrating cake baking to us.

I have been baking for a few months now and after I attended her class, i have learned the science behind each Technique. I usually just put things all together and my recipe is a shortcut because it gives me a very good taste and texture... But I didn't know what I did wrong whenever something is not consistent with the cake(of the same recipe) I baked a month ago and the cake I baked yesterday. Again, after the class I know what ingredients or temperature or what recipe works best...
It was a great feeling for me to go home.. As expected... small things did me a great favor. As expected... I enjoyed the class. As expected... I am more confident and more knowledgeable. As expected... Chef Judy is very good! Can't wait for our next class.

Painted fondant cake

This cake is the base of a 3 tier cake. It was a pre-ordered chocolate cake. I have to be honest that my mom didn't have oven in the province so i had to pre-order my cakes, as much as i want to make/bake my cakes but i have no choice this time. (I am 4hrs +45mins plane ride away from home)

I planned my time to prepare this cake, i was expecting it to arrive at 10am august10...the celebration is Aug11
In the afternoon. Guess what? It arrived 3pm.. That's sad and bad business to whoever we ordered the cake to... I didn't have enough 6hours time to keep my cake frosted inside the fridge. They don't know how important time is for cakes and cake decorating. Besides i am not decorating 1 cake alone. There's 3 of them. So i had to revise my design.

I started frosting one by one right after it arrived, oh no i still had to wait... one bad thing they did... they delivered the cake "fresh from the oven" cake was not in good shape when it arrived (sigh!) it has bump bruise on the side... Have to pop it in the fridge to cool it down. Then i started frosting for real. Took it out at midnight and started decorating one by one. I finished the next day. I didnt have time to prepare myself for the event... I looked exhausted..... But very happy that I have shown my mommy that i made a very lovely cake for her.

I will make another blog with pictures of my helpers. Good times. :)

Super "S" cake

Super "S" cake
This is the top layer of a 3tiered cake i made last August. It is made of fondant. I painted it with white shimmering powder. And the "s" I formed is made of golden sugarpaste.

This cake is very special because it was for mommy saning (my mom/grannyMom).
I went home from Singapore to Philippines all the way to Iriga City to make this lovely cake.
I made it a point my cake is super special by making the initial "S" for super mommy because she raised 11kids... Including me is 12children in total... That's a record cause everyone lived their life to the fullest.

Bowling

This is the latest specialty cake i made for a classmate. She ordered it for her friend who loves bowling.
I took photo while i was still making the design. I also took a photo of it's cake with a buttercream frosting before i covered it with fondant.
It was kind of funny because the bowling pin i made is small. Then i made a big bowling ball. But when i put them together.. It looked lovely.

Dora the Explorer specialty cake

This was mainly created/customized for my God daughter Zoey Sia Borra. I covered the main cake with lots of hot pink flowers, with small ones. I wanted it to look like a "gardenia style tropical island". I took a lot of photo of course I was so proud to know that I can pull this one. I did not think about the design in advance nor draw it in a paper but I have an idea of what I want the cake to look like just like how I explained Dora the explorer's vacation would be in my previous post, It was more of a spontaneous thing. I also love to mention, Dora the Explorer cake topper looks lovely, all i need is create the purple bag.

June 30, 2012. This is the most exciting part when everybody saw the cake at the party. I was nervous, yet proud because I knew I will make the parents happy and specially my 2 years old Goddaughter will definitely love Dora having an adventure by having a grand vacation on a lovely tropical gardenia style island. I small details, about 5 yellow stars as background, and the map which is relatively bigger than the bag. I just put it a bit far from the bag so size won't matter at this point. The background, orange wrapped gifts highlighted the colors of the cake, specially the pink flowers.. it seems more vibrant than the picture taken at home. :)) but it was actually hot pink flowers. All in all, the party went well and everybody loved the cake.
